The AIK Stockholm loanee out-jumped his marker to send a powerful header home for the opening goal under one minute.
The 20-year-old then hit the byline with lightening pace before playing through team-mate Christopher Brandeborn to slot home the doubler on nine minutes.
Amponsah-Karikari was playing his second game for Degerfors since joining them before the start of the season.
2009 FIFA World U20 gold medalist Kassenu Ghanady was introduced in the 90th minute for Degerfors .
